RECIPES OF THE MONTH

Cocoa Nib - Ancho Chile Rubbed Roasted Pork, paired with the Central Waters Brewing Co's Mudpuppy Porter
Ingredients:
- 3 tablespoons sea salt
- 3 tablespoons brown sugar
- 3/4 cup cocoa nibs
- 1 tablespoon coarsely ground black pepper
- 2 tablespoons ancho chile powder
- 1 teaspoon cayenne pepper
- 1 teaspoon garlic powder
- 1 teaspoon grated orange zest
Grind all ingredients in a food processor fitted with the metal blade. Use
mixture on pork, turkey, or country style ribs. If cooking over open flame,
use foil or grill grate for indirect heat to avoid flare-ups. Makes about
1 1/2 cups.
Beer Bread
Prep Time: 5 minutes
Cook Time: 1 hours, 10 minutes
Ingredients:
- 4 cups flour
- 1/4 cup sugar
- 2 Tablespoons baking powder
- 12 ounces beer (NOT light beer)
- 2 teaspoons salt
- 2 eggs, slightly beaten
Preparation: Mix flour, baking powder, and salt with sugar. Add beer and egg both at once and stir. You may have to knead last of flour in with hands.
Place in greased 9-inch by 5-inch loaf pan and bake at 375 degrees until done - about 1 hour and 10 minutes. Remove from pan immediately and cool.
Yield: 1 loaf beer bread
Optional: Pour 2 tablespoons of butter over the batter for a golden appearance and crispy texture.
